Pre-order by 3 pm Thursday June 11 and select your pick up date and time for Friday or Saturday. This menu is packed cold to reheat later. In actuality you are finishing the dish and not just reheating cold leftover. Chef Brian has been doing pre-packed meal services since 2003 and employs what is known as “banquette cooking” techniques. Banquet chefs cook food in large batches and stage them to be finished in the oven just before plating that 500 person event. This same technique is what we use when we offer “cold pack” menus. Be sure to follow the directions on the package. In some instances if you choose to just microwave a dish for a minute or so you will not get the best experience.
